I'm in the home stretch! Graduation is only days away. My years of juggling college + work + life are nearly #donezo. Only t-minus 33 days until I'm back doing all of the things that I love - working out, spending time with friends, exploring, and cooking, etc. *happy dance*
This past weekend I did have some time to cook and get some meal prep done (first time in weeks). I had a bunch of random veggies that needed to be cooked, so I threw some into a chili and roasted the rest. Needless to say, my belly is happy with me this week.
My favorite chili includes a mix of black beans and chickpeas (hello, protein and fiber)!
Some chopped veggies.
Coupled with various seasonings.
All tossed into a pot with a can of crushed tomatoes and vegetable broth.

When the chili was finished, I topped it off with some kale for extra nutrients and let it cool.
