A new month, a new beginning! Start fresh. Set goals. Get inspired. Chase your dreams.
As cliche as they all sound, make them happen. It's never too late to start living.
Anyway, I wanted to kick off the month with a new recipe! I have recently made an effort to
push myself out of my kitchen comfort zone and improve my cooking, so I have experimented
with several new spices and new cooking methods. Needless to say, it has been a success so far!
I encourage everyone to get a bit more daring and heat things up in the kitchen whenever possible.
It's lots of fun, and I know others will enjoy it too. 😊 I know my family has!

Chicken and Rice Skillet

Prep Time: 7 minutes
Cook Time: 20 minutes
- 2 tbsp. EVOO
- 1 red bell pepper, chopped
- 1/2 c. vidalia onion, chopped
- 1 c. baby Bella mushrooms, chopped
- 10 oz. chicken breast, chopped into cubes
- 1 tbsp. EVOO
- kosher salt, paprika, crushed red pepper, chili powder, and garlic powder, to taste
- 1 c. brown rice
- 1 1/2 c. water
Directions: Bring skillet to medium heat, and then add EVOO. Once oil is heated (about a minute or so), add veggies and sauteé until wilted. Next, add chicken, EVOO, and seasonings. Mix well. Continue to cook until chicken is about halfway done. Finally, add brown rice and water. Allow final mix to simmer until liquid is absorbed (about 8 minutes). Remove from heat, then plate. Garnish with your choice of toppings or additional spices, and enjoy!
