As I'm sure you all know by know. I love, love, love my veggies.
Instead of my family having a problem getting me to eat my greens,
they have a problem getting me to not eat my greens...
Needless to say, my dad had it good when I was growing up. :-)
Anyway, as my recipe stories usually begin, I was in a pinch for
breakfast and needed something balanced before I jet out the door for
class and work with Sweet Note. I wanted my usual oats, but I was out
of my favorite ingredient: pumpkin! Trust me when I tell you that it's
every health foodie's worst nightmare. So I scrambled through
my fridge to see what I could add to my bowl and found a bunch of
zucchini squash that I had forgotten all about. I've seen so
many foodie friends add this to their oatmeal on Instagram, so I figured
it was time to finally give it a try.
