Hooray - onto the second recipe I promised this week. The following is one of my go-tos. If I'm not having chia seed oats, then I'm having pancakes. I admittedly have a wicked sweet tooth when it comes to breakfast. Blame it on all the omelets I've had over the years.
From zucchini to carrot, it's fun to incorporate veggies into my mixes. This recipe certainly has a fall flair to it, but let's get real - fall is always welcome. Especially in the form of pumpkin... but I'm sure anyone could have guessed that. 😉
Today I put pumpkin on the back burner (sorry, Charlie) and let the underrated sweet potato steal the spotlight. This recipe coupled with maple syrup or nut butter is pure. freaking. bliss.
It also makes a great snack or dessert too! Triple whammy.
