Hey, Hey, Hey... It's Recipe Reveal Day!
Finally, the post that I have been anticipating all week!
I do apologize in advance if my energy level is a bit too high this morning, but let's face it... new recipes rock! Do they not? I know that Heather and Liz are sharing the recipe hunka hunka burnin' love with me.
Anyway, if you follow me on Instagram, then you may already know what my recipe is going to be.
If you don't, however, then you're in for a very sweet treat! Are you ready for it?
Okay, so maybe not Carrot Cake Cupcakes, but definitely something better:
Carrot Cake Oat Bran!
Just when I thought that I couldn't possibly come up with another oatmeal recipe,
I remembered one of my favorite childhood desserts.
And what's better than dessert for breakfast?
Carrot Cake Oat Bran
By: Brittany @ Freckled Nettles
Prep Time: 5-10 Minutes
Cook Time: 5-8 Minutes
• 1/4 Cup + 2 tbsp. Grated Carrot
• 1 Scoop Vanilla Protein Powder**
• Dash of All Spice
Directions: In a medium pot, prepare oats according to cooking instructions provided on original package. Add ¼ cup carrot to oats while cooking. In a separate bowl, mash the banana. Add the protein powder (or protein substitute) and spices to the banana mash, then stir. Once the oats are prepared, fold oats into the banana mixture. Top the finished oatmeal base with remaining grated carrot, marscapone cheese, and an extra sprinkle of cinnamon (for extra sweetness)! Enjoy!
** Can be substituted with your choice of Greek yogurt, cottage cheese, or any type of protein you desire! However, if omitting the powder, be sure to add a sweetener!
I hope you all enjoy my newest recipe! Have a wonderful Thursday!
How do you incorporate veggies into your breakfast?
