If you checked out my post on Sunday, then you know I went
Super Bowl snack crazy this weekend! I guess that's what you get when
you put a foodie in charge of some dishes for a Game Day get-together. If only you were
able to see how much delicious (and not to mention sinful) grub
was everyone brought! Needless to say, I tossed my healthy habits aside and
let myself indulge a little. Fortunately, there were so, so many gluten-
free goodies there. I was a happy camper.
I was sure to bring a dish that captured my values: something nutritious, but something definitely
more geared towards hungry friends. At first I was thinking a Buffalo
Chicken Dip, but then I remembered that Michelle was already bringing the heat
to the kitchen. So I decided on another simple dish: Potato Skins!
They are quick, easy, and fun to prepare.

Pizza Potato Skins

Prep Time: 5 Minutes
Cook Time: 45-60 Minutes
Ingredients: 4 Large Russet Potatoes
Directions: Preheat oven to 425. Prepare potatoes by first scrubbing them well, then slicing them vertically (into little discs). You want them to be thin enough to crisp, but thick enough to sustain the toppings. Place discs in a medium-large bowl and toss with EVOO. Finally, lay them out evenly on the baking sheet and sprinkle with salt and pepper. Place the discs into the oven and allow them to bake for 30-45 minutes, depending on the thickness you chose. Look for a golden crust. Remove from oven. Allow skins to cool for three minutes or so, then top with equal amounts of sauce and cheese. Finally, sprinkle with parsley and place back into oven for another 8-10 minutes. If you like a crispier skin, then leave it in a bit longer. Top with any additional condiments. Enjoy!
