I've been on a total Italian food kick lately! From gluten-free pasta to, well, more gluten-free pasta,
I have put together an assortment of dishes. On the days that I wasn't craving a heavy
dish, however, I turned to a slightly lighter grain: brown rice! It's my favorite go-to dinner base.
If you love rice bowls, give this recipe a try. It is the perfect balance of complex carb,
lean protein, and healthy fat. Oh, and fruits and veggies too. 😋
Italian-Style Rice Bowl

Prep Time: 5-7 Minutes
Cook Time: 10-12 Minutes
Directions: Prepare rice accordingly. Stir in crushed tomatoes and tomato paste. Set aside. In a non-stick pan, bring 1 tbsp. EVOO to a medium heat, and then place eggplant in pan. Drizzle second tbsp. of EVOO on top of eggplant. Sprinkle with kosher salt and red pepper flake. When slightly browned (about 6 minutes), flip over and allow browning again (about another 4-5 minutes). Eggplant should look slightly wilted. Remove eggplant from heat and allow to cool. Finally, remove sausage from casing and crumble it up into bite-sized pieces. Cook them on medium heat, until browned. When finished, scoop tomato rice into bowl, top with eggplant, and sausage crumble. Oh, and an extra dash of kosher salt never hurt too. Enjoy!
I always thrown an extra green veggie in there too. Sauteed brussels or spinach pair phenomenally well!
