Hey, Hey, Heyyyy...
It's Recipe Reveal Day! *clapping hands*
I'll be honest, this past weekend had me FRIED! As I mentioned in yesterday's MIMM post, it was chock-full of events. From working on school work to representing Sweet Note Bakery at the Gluten-Free Allergy-Free Expo (recap on Thursday's post), I dabbled in it all. So, essentially, by the time that Sunday afternoon rolled around, I did not want to participate in any form of physical activity, which certainly included the two tough contenders: running and cooking.
Lo and behold, I sucked it up, grabbed my headphones, laced up my shoes, and dragged my booty out the door. I knew that I had to get a good run in, otherwise I'd regret it later. So I went on a free run, without a predetermined distance, and took myself on a tour of my new neighborhood. It turns out that running that day wasn't so bad after all.
The scenery that my route had was absolutely breathtaking. Also, I spent the majority of my run pondering what hell I wanted for dinner. I was in one of those indecisive moods and spent, I kid you not, thirty minutes of my run putting together all kinds of different meals. Am I the only one who does this? Anyway, I ran, ran, and ran until I arrived at a dinner decision...
I wanted Japanese!
Since I haven't gotten the chance to get my sushi on (I am going through serious withdraw at this point), I figured that I'd cater to my favorite international cuisine in some way or another. With my run complete, I kept my mojo flowin', and whipped out my wok once I got home. It was stir-fry time. The two tough Sunday contenders were about to be made mine!

Prep Time: 10 minutes
Cook Time: 10-12 Minutes
Directions: Bring skillet to medium heat, and then add sesame oil. Once oil is heated (about a minute or so), add veggies and tofu. Cook until tofu is slightly browned. Next, add rice, egg whites, aminos, and ginger to veggie mixture and stir well. Finally, once the egg whites are cooked thoroughly, turn off heat and let stir-fry cool. Pour it into your favorite dish, garnish with your choice of toppings or additional spices, and enjoy!
Never be afraid to push yourself against your own will. You can, and will, achieve more than you think (even if it is something as trivial as a run and a dinner). Have a wonderful day, friends!
