Of course, this recipe came to me during a minor kitchen rampage. I was hungry, didn't have much to work with, and needed to something to eat quickly before I had to jet out the door! Needless to say, I prevailed and created this delicious dip. Turns out the kitchen rampage wasn't so bad after all!
Directions: In a small bowl, combine sweet potato, hummus, and yogurt together. Fold in artichoke hearts and beets. In medium-large bowl, combine spinach and sweet potato blend together. Finally, fold in tuna. Grab your favorite tortilla chips or crackers. Enjoy!
