I'm sure you can now infer the meaning of #pancakeporn. Let's dig in, shall we?

So you've all heard of green eggs & ham, but have you ever heard of green
pancakes and peanut butter? If so, please feel free to tell me that I have been living under
a rock for the past few years.
Anyway, I was experimenting in the kitchen this past weekend and had a serious
craving for 'cakes. I, however, didn't have many ingredients to work with and still needed
to squeeze some veggies into my meal. Needless to say, I took a leap of faith and tossed
some of my favorite veg friends into my Magic Bullet. The result? A
not-so-pancake-like batter. The recipe definitely needed some tweakin'.
The next morning, I put my baking cap back on and tried another blend of ingredients.
In this case, the second try was a charm!

Prep Time: 4 Minutes
Cook Time: 6 Minutes
Directions: In a blender or food processor, blend all ingredients except for PB. Make sure that everything is blended well and that the consistency is smooth (the batter should look similar to regular pancake batter). Heat skillet to medium heat and spray with non-stick spray. Next, pour batter onto skillet. You should be able to make three ‘cakes. Allow to cook for 3 ½ to 5 minutes. Flip. Allow to cook for another minute. Both sides should attain a golden color. Once finished, remove ‘cakes from pan and top with nut butter. Feel free to add maple syrup, honey, agave, or anything else that your pancake-loving hear desires! For now, I've got the veggies covered :-) Bon appetite!
And of course, I sulked when I took my last bite.
